McMillan quits Applebee’s, reflects on her year-long investigation into America’s way of eating and her discovery, contrary to the myth that only the elite want to eat good, fresh food, the rest of society does as well. McMillan’s investigation into America’s way of eating revealed a stark contrast between the expectations of wealthy individuals who wished for high-quality ingredients and those of regular citizens who largely lived on fast food. To address this problem McMillan offers two solutions in her book, “The American Way of Eating: Undercover at Walmart, Applebee’s, Farm Fields and the Dinner Table.”
In Chapter 10 “Conclusion and Holy Ted Nugent?” she proposes that one solution is to increase access to fresh produce through local grocery stores in low-income neighborhoods (McMillan., 2012). She explains that while farmers markets have become more common around cities they still remain out of reach for many due to transportation or other logistical issues. By providing better access within walking distance it could help bridge the gap between those with limited financial means yet still wish to eat healthier.
Another solution offered by Mcmillan is an increase in public awareness regarding healthy eating habits (McMillan., 2012). This includes not only educating people about what foods are nutritious but also creating incentives for them such as tax breaks or subsidies when purchasing locally grown produce from farmers markets . She emphasizes that this is important as people need both practical solutions combined with knowledge nurturing healthier habits if real progress is be made towards improving nutrition nationwide.
