Foodborne illness, also referred to food poisoning, is any illness resulting from the spoilage of contaminated food, pathogenic bacteria, viruses, or parasites that contaminate food, as well as toxins such as poisonous mushrooms. Foodborne illness is caused by consuming contaminated foods or beverages. Many different disease-causing microbes or pathogens can contaminate foods, so there are many different types of foodborne illnesses. Most foodborne diseases are infections caused by a variety of bacteria, viruses, and parasites. Four basic food safety principles work together to reduce the risk of foodborne illness. They include: clean, separate, cook, and chill. Most food poisoning is mild and resolves without treatment. In most cases, you can treat food poisoning by replacing lost fluids and electrolytes to prevent dehydration. In some cases, over-the-counter or prescription medicines may help. You can prevent some food poisoning by properly storing, cooking, cleaning, and handling foods. You should consult a physician if: vomiting persists for more than two days, and diarrhea persists for more than several days.
