Microbes are microscopic organisms like bacteria, yeasts and other fungi, and they occur everywhere in the food system. Communities of microbes are essential in plant, animal, human and environmental health, with a consequently impact in terms of crop and livestock productivity, food quality and safety as well as for food waste decomposition and recycling processes. The microbes that work in the recycling role use the organic carbon in the organic matter as an energy source (food).
